Hey good looking! What’cha got cooking?

September 26, 2010

It’s raining today. The kids have gone with my spouse to pick up a metal shelf in order for said spouse to better arrange his side of the garage (also known as “his MR2 parts have come here to die heap”). I convinced him to take the children with him as I was given no warning and had planned a cooking frenzy. With today being my due date and having very little food already in the freezer stash (6 meatballs!), I realized that this could pose a problem. As I have posted before, my spouse doesn’t cook.

Therefore, this afternoon is busy. I’ve already processed 3 pounds of fruit into fruit salad, boiled two family packs of chicken, and steamed a few pounds of broccoli. I currently have some blueberries drying, which will become some very tasty blueberry muffins, and four cups of mixed vegetables steaming.  Ground pork is thawed.  A four pound Boston butt roast is percolating along in the slow cooker with apple juice and apple cider vinegar.  The chicken is cooling so that I can chop it up.  I have five pounds of ground beef thawing.

The plan is as follows:

  • 2 chicken broccoli casseroles to the freezer
  • 2 chicken pot pies to the freezer
  • 1 pork tortiere for later in the week
  • 3 pounds of meatballs to the freezer
  • Salisbury steaks and mashed potatoes for dinner
  • 2 pounds of chopped cooked chicken to the freezer
  • 4 pounds of BBQ pork to the freezer in smaller sandwich portions
  • fruit salad will be gobbled up before end of Tuesday more than likely

Later this week, we will have:

  • cucumber and tomato salad (the cucumbers have to marinate in a vinegar, sugar, and raw onion mixture at least overnight)
  • garlicky kale and white beans
  • spaghetti squash and sauce with any vegetables that need to get used up.

Hopefully, the baby will come at some point!
