Mmm yesterday was a baking day.

Well, I haven’t accomplished much outside of the home lately as it has been in the mid to high nineties for what seems like eons.  Even baking seems like a fool’s errand, but I have found that running a box fan in the kitchen helps significantly with the heat.  Yesterday was a big kitchen day, aside from making the regular meals, I processed and froze 6 pounds of turkey figs, baked two peach pound cakes, and made a batch of banana muffins.  The muffin recipe actually yielded 22 muffins, surprise!  I added chocolate chips and substituted honey for the white sugar.  They are absolutely wonderful and moist.  I intend to freeze the pound cakes for company visiting after the baby arrives.

There was a great sale on peaches, as they’re in season here in the South, so I have 8 pounds of yellow peaches to work through.  We’ve probably already eaten or used four or five actual peaches, but have a long way to go with close to six pounds left.  At $0.39/pound, I simply couldn’t pass them up.  I may process and freeze a lot of them today to use in baking later in the fall or winter when they’re no longer available.
