Rice Pilaf

April 26, 2010

In ridding the house of processed foods, one of the tasty favorites Rice A Roni went away.  Today I am attempting to create a new favorite rice pilaf with some  staples in my kitchen, namely brown rice, chicken broth and some orzo I purchased specifically for this purpose.

¼ cup orzo

¼ cup butter

¾ cup brown rice

1 ½ cups chicken broth

¾ cup water

1 teaspon dried onion

pinch turmeric

pinch thyme

pinch Italian seasoning

½ teaspoon dried garlic

½ cup broccoli florets (cut down to just the tops)

Sea salt and pepper to taste

Brown the orzo in the butter.  Add everything but the broccoli and bring to a boil.  Reduce to a simmer.  After 5 minutes, add the broccoli.  Simmer until your brown rice is cooked through.  Add end of cooking period, add sea salt and pepper to taste.  It won’t be as creamy as Rice A Roni.

Generally, I would soak the brown rice first, but I wasn’t very organized today.
