Broccoli Cheddar Goodness

I purchase my fresh broccoli in a Costco bag so I am always trying to come up with ways to use it up. I started with this very basic recipe from The Vegetarian Times and went to town.

* 3 cups Pepperidge Farm stuffing
* 1 – 1.5 cups of water, enough to rehydrate stuffing but not make it overly “wet”
* 1 palmful of dehydrated onion
* 3 cups of fresh broccoli florets, lightly steamed
* 1 cup mild shredded Cheddar cheese
* 3 large eggs, lightly beaten with 1 tablespoon milk
* 10 dashes of Tabasco
* 5 shakes of garlic powder
* 4 turns each of sea salt and black peppercorns

As you can see, I substantially altered this recipe.
350 degrees. Fill roasting pan with water. Grease a 9×5 loaf pan. In a bowl, combine the stuffing, onion and water. Add eggs, cheese, Tabasco, garlic powder, salt and pepper – stir to combine. Gently add the broccoli then squash the whole mixture into pan. Set loaf pan into roasting pan to bake. Bake about 45 minutes.
