Chicken Broccoli Pasta

So tasty you won't be able to stop yourself.

The kids have been sick for going on 5 weeks now (they’ve been to the doctor and it’s just a cold that they can’t kick), hence the absolutely lazy meals that I’ve been preparing of late. Tonight’s dinner is chicken broccoli pasta, in a white sauce.

Chicken Broccoli Pasta
1# bag of rotini whole wheat pasta (cooked and drained)
1# chicken (cooked and diced)
1# broccoli florets (cooked)
1 block of cream cheese
1.5 cups of shredded mozzarella (frozen works fine)
1/2 cup of chicken stock
1 12 oz.can of evaporated milk (a victim of the pantry clean out – usually I just use fresh milk)
salt and pepper
2 cloves of garlic minced
3 T of butter
Parmesan (optional)

Place the butter, garlic and cream cheese in a saucepan over medium heat. Give it a minute to warm through (cream cheese never truly melts in anything I’ve ever made). Add the evaporated milk and stock. Allow everything to melt together and stir well. Toss in the cheese. It will melt and thicken your sauce.
In a large bowl combine pasta, broccoli, and chicken, then coat with sauce. If you’re feeling adventurous, top with a little Parmesan.
Serves 8 easily.

      Click the orange box in the URL. It is on the right side of the URL and that should allow you to subscribe. Then choose through which portal you want to subscribe, yahoo, google, et cetera.
