April No Spend Challenge
So it’s April, the month of federal, state and withholding taxes in addition to all the regular bills. Good times. The challenge is to eat at home, unless being treated, do no unnecessary spending, and (as I’m always one for a positive goal) make two to four laps around the neighborhood circle daily.
Here’s the menu plan for the next few weeks. It should help eliminate spur of the moment trips out and the what’s for dinner quandry.
04/01 Steaks, mashed potatoes, steamed sugar snap peas, sauteed mushrooms
04/02 Grilled cheese and chicken noodle soup (both kids are sick and all they could tolerate)
04/03 Salmon burgers with spicy guacamole, steamed broccoli, steamed carrots
04/05 Mother in Law provided leftovers from Easter lunch (couldn’t go, sick kids and mama)
04/06 Grits, sausage, strawberries (mama sicker, kids marginally better)
04/07 polenta, spaghetti sauce, veggies TBD
04/08 Nana’s red beans and saffron rice
04/09 Chicken pot pie with biscuit topping
04/10 Salmon patties (tinned salmon), broccoli cheese rice
04/11 In laws
04/12 Black bean sweet potato enchiladas
04/13 Bacon, eggs, toast, fruit
04/14 Fried rice
04/15 Chcikpeas and garlic with sizzling sage
04/16 Artichoke risotto (will need arborio rice)
04/17 Cheese pizza
04/18 In laws
04/19 Nachos (chili already in freezer)
